§ 04 — A working reference list

What chefs say after a full season on our books.

Three short, attributed notes from named London and Kent kitchens. Full reference list on request — including fourteen Michelin-starred and Bib Gourmand rooms.

“The White Park sirloin has been on our menu every service since the week Tom walked a half carcass through our kitchen door. Our diners ask after it by name now — and we can tell them the field it grazed.”

Chef Patron, The Fordwich Arms 1 Michelin star · Kent

“We replaced three suppliers with St Leonards. The mutton particularly — hung properly, killed on the farm, in our cold room before lunch. Iris sorts a substitution before service starts. That alone is worth the minimum.”

Group Head Chef, London gastropub group 7 sites · Bib Gourmand

“The Christmas bronze turkeys are the only ones we will write on the menu by name. Margaret takes the booking call herself, and the provenance QR goes on the carving board at the pass. Nothing else compares.”

Head Chef, Quo Vadis Soho · Trade account since 2019
Also on our trade list The Sportsman · The Hand & Flowers · St John · Brat · Mountain · Quality Chop House · Lyle's · The Wolseley · The River Cafe · The Camberwell Arms · Canton Arms · The Marksman · The Harwood Arms
